After coming back from work Monday evening I had intention of making and posting either a recipe on how to make a Pumpkin Bar or Blueberry Cobbler which is I might say, very healthy and mouth-watering. However, I have made a different decision in the last minute. I am going to share with you my last minute creation from Monday which certainly doesn’t fall behind with its taste behind these two. I truly believe this recipe is going to win your hearts!

I first have to give my sincere apologies to all the meat lovers reading this, because this meal is meatless. Well, while this fact is unfortunate for some, just try it and, trust me, you will love it!

For me, every dish is special in its way. Each of them, has a little something we particularly like (or sometimes even don’t like), and right here, it’s the good whole flavours mixed together to create mouth-watering chili. Moreover, it has a little secret ingredient adding up on its taste.

Quiet… Let me whisper it on your ear. A stick of cinnamon!

Oh yes! That’s right! Whole time while chili is slowly cooking on the stove, cinnamon is letting out its amazing flavour.

Ingredients | Total Time: 1.30h
3 can of low sodium, rinsed black beans
1 cup quinoa, uncooked, rinsed
3 cups vegetable broth, low sodium
2 cups water
1 can hominy or yellow sweet rinsed corn
1 can diced tomatoes
1 tablespoon fresh cilantro, chopped
1 poblano pepper, finely diced
1 tablespoon minced garlic
1 green pepper, chopped
1/2 medium onion, diced
1 cinnamon stick
2-3 tablespoons chili powder
1 teaspoon cumin powder
1 teaspoon onion powder
1/2 teaspoon ground pepper
1/2 teaspoon salt

In one and a half hour you need in total to prepare it you will have an amazing chili.

Serves: 8 servings

Instructions? Well, we almost do not even need them.

Just put all the ingredients in one large pot. Turn heat on to medium/high and bring to a rolling boil. After that, cover and let simmer on low for about an hour.

It should be served with avocado, and diced green onions.
