If you want to boost your pesto with proteins you should add hemp seeds instead of pine nuts. This is a great pesto with tomatoes and pasta, as well as dressing with roasted vegetables or as a tasty addition to sandwiches.
For the cream:
You’ll need nuts 1 cup cashews, 3/4 cup water.
For the pesto:
2 cups fresh basil, 1/3 cup of hemp seeds, 2 cloves of garlic, 2/3 cup extra-virgin olive oil, grated zest of 1 organically grown lemon, a pinch of salt and pepper, 1/2 cup cream of cashew nuts.
In a blender, mix cashews and water, so you get a unified mass. For the pesto, mix the basil, garlic, grated lemon zest, salt, pepper and hemp seeds. Add the olive oil and continue to mix. Finally, add the cream of cashew nuts and whisk a little more to the masses combined.
Serve with raw zucchini cut into a spiral form, or with cooked pasta integral, or with brown rice. Garnish with basil.
